Made these for our Saturday morning breakfast on the beach. They are made with sourdough discard, are quick and easy to make and tasty too. They would be a lovely addition to the kids lunchboxes.
You will need :
1 cup plain flour
1 cup ground almonds
1 teaspoon baking soda
1 teaspoon ground cinnamon
Large pinch of salt
3/4 cup sourdough
1/2 cup maple syrup
1/3 cup milk( I used oat milk)
1/4 cup sunflower oil/ melted butter
1 large egg
2 pears cubed or grated
flaked almonds (optional)
Method
β’ preheat oven to 180oC and line a muffin tin with 12 cases.
β’ in a large bowl mix all the dry ingredients
β’ in a large jug mix all the wet ingredients and add to the dry ingredients.
β’ fold in chopped pear and scoop mixture into the muffin cases. Top with flaked almonds.
β’ bake for 25 - 30 minutes until muffins are golden brown and skewer comes out clean. Leave to cool and enjoy.
